Hopi Red Dye

Amaranthus cruentus x A powellii
Similar to Burgundy Amaranth with a bit deeper color. Use as a micro green, a salad mix ingredient, or braise with other summer greens for a warm salad. Plants reach 5-6’ tall at maturity and have multi-branching stalks with sprays of burgundy spikes. Flower bracts can be used as a food dye and seeds are used ground for gluten-free flour.
