Daucus carota var sativus
Specialty carrot with pure white roots, pale green shoulders, and a mild, delicate flavor. White carrots were once grown in the Middle Ages but have since become exceedingly rare. A vigorous grower, it should be harvested no more than 8” long to prevent it from becoming woody. Developed by High Mowing Seeds breeder/grower, Dr. John Navazio.
