Also known as Italian cauliflower, in reference to the vegetable’s northern Italian roots. Romanesco cauliflowers continue to gain popularity in the US as a gourmet vegetable. Veronica produces extraordinarily cool heads with spirals upon spirals in a fractal pattern. Heads are sea-green in the fall and creamy white in the summer with a blush of pink if exposed to sunlight for extended periods of time. A truly magical look -- almost too cool to be eaten! Matures late summer into fall. Large plants need 30-36” spacing.
